This is a great hummus recipe. It’s a great healthy alternative to mayo on sandwiches and great at parties.

1 can chickpeas (rinsed, save water)
4 cloves garlic
1/4 cup tahini
lemon juice
red pepper flakes (optional)
paprika (to serve)

1. In good blender or food processor, process garlic until chopped.

2. Add chickpeas and some of the water (about 1/4 of it). Process until you can see no more whole chickpeas.

3. Add tahini, mix well.

4. Add some lemon juice and salt to taste. If too thick, add more chickpea water.

Variation: mix in some red pepper flakes for a spicy version.

To serve: top it off with a sprinkling of paprika.
