A weekly menu

I spent some time today working out a menu for our food this week. More often than not, we end up cooking last minute and it’s not overly creative. We have lots of food on hand, but very little time to think up and prepare it, especially if we are missing an ingredient.

So, today I scoured my cookbooks for some new things to try. Mostly not recipes we already know. A whole week of new things to spice things up a bit. We also plan to cook more at once, and just reheat, to deal with the expected busy times of our week.

Here are the items I’ve dug up for our week:

  • jerk chicken
  • cornbread (low fat)
  • three-mushroom soup (low fat)
  • baked risotto (low fat)
  • roasted peppers
  • baked cauliflower
  • salmon with tequila cream

That should get us through Sunday to Thursday. Tuesday we have dinner at Ianiv’s mother and Friday we go away for our anniversary. Should be a yummy week. I might also toss in a banana lime bread I found a recipe for. It sounds very tasty.
